Apple Pecan Salad With Springtime Vinaigrette
What's a great way to spice up a springtime meal? Well with this Apple Pecan Salad with a Springtime Vinaigrette! It is a light and airy salad that will bring a new flavor to any meal you make! It is great as an appetizer, a side dish, or even a main course!
Ingredients
1/2 tsp Pecan Honey Mustard (find in store)
2 Tbsp Vinegar (Peach Balsamic or Meyer Lemon White Balsamic)
2 Tbsp Basil Genovese EVOO
1/4 tsp Sea Salt (Vanilla Bean or Sel Gris)
Fresh Ground Black Pepper to taste
4 cups Mixed Greens
1 Apple, cored and sliced thin
1/4 cup Pecans
1/4 cup Goat Cheese, crumbled
Instructions
In a medium size bowl, whisk together the mustard and vinegar. While whisking, slowly drizzle in the olive oil. Add salt and pepper to taste.
Toss the greens, apples, pecans, and goat cheese with the dressing. Enjoy! Optional: garnish with fresh or dried lavender for a hint of color.
