Charred Corn Chicken Salad


Summer salads done right from Ampersand!

This salad is not only beautiful but so easy and flavorful to make. Ingredients:

2 Ears of Corn, charred/chopped

2 c Spring Greens

1 Rotisserie Chicken

1 Avocado, sliced

6 Medjool Dates, pitted/chopped

4 oz Goat Cheese, crumbled

1/4 c Pickled Onions

1/4 c Sliced Almonds

Hot Bacon Dressing

3 Bacon Slices, cooked/chopped

1/2 c Caramelized Garlic EVOO

2 Garlic Cloves, minced

1/3 c Smoked Balsamic

1 tsp Dijon Mustard

1/4 tsp Pepper, freshly ground

1 tsp Applewood or Black Garlic Sea Salt

1 Tbsp Pepper Jam - Ampersand has a wonderful selection

Directions:

  1. Add all dressing ingredients to a small saucepan over medium-low heat. Keep over low heat until ready to serve. 

  2. Assemble the salad by tossing greens, chicken, corn, dates, goat cheese, pickled onions and almonds. Add avocado on top when ready to serve. Drizzle with Hot Bacon Dressing and enjoy! Salad yields 2-4 servings.
