Mediterranean Smash Burger

Ingredients:
1 lb Ground Lamb Burger
4 Burger Buns
1/2 English Cucumber, Diced Small
1/4 Red Onion, Diced Small
1 Cup Arugula
2 Roma Tomatoes, Deseeded & Diced Small
11/2 tsp Citrus Dill Sea Salt
11/2 Cup Full Fat Greek Yogurt
3 TBS Cucumber Balsamic
3 TBS Sicilian Lemon EVOO
1 TBS Lemon Dill Tzatziki Rub
Directions:
Mix ground lamb, mediterranean rub, and 1/2 tsp of citurs dill sea salt together well. Split into quarters and roll into balls. Set each ball on it's own parchment paper and put another sheet on top and flatten as thin as you can. Put in fridge while you prep the rest.
Dice onion, cucumber and tomatoes into the same size. Toss in a bowl together with 1/2 tsp of salt, 1 TBS of cucumber balsamic and lemon oil, set aside.
In another bowl make your Tzatziki by mixing together the lemon dill tzatziki rub, greek yogurt, 1 1/2 TBS Cucumber Balsamic and Lemon EVOO. Set aside in fridge.
Heat a cast iron pan working one at a time place your lamb burger on the hot cast iron and cook for 3 min, flip cook for 1-2 min more. Repeat until all your burgers are cooked.
Toss your arugula in the remaining oil & vinegar with a scrunch of black pepper and a pinch of salt.
Toast your buns and layer on the tzatziki sauce, arugula, diced greek salad, burger and FEAST! This is so good it was hard not to eat all 4 yourself.
