Spiced Pumpkin Muffins
Muffin Mix:
1 box Pumpkin Spice Quick Bread Mix (found in store)
1/2 c Blood Orange EVOO
1 c water
2 eggs
1/4 c pecans or walnuts, optional
Cream Cheese Filling:
12 oz cream cheese, softened
1 tsp vanilla
1/2 c powdered sugar
Crumble Topping:
1/3 c brown sugar, packed
4 Tbsp butter, melted
2/3 c flour
Directions:
Cream Cheese Filling:
Combine all ingredients into a bowl and beat until creamy and smooth texture.
Crumble Topping:
Combine brown sugar and sugar shaker in a bowl and whisk.
Pour in melted butter and whisk. Add flour, stirring until combined. Mixture should be crumbly!
Muffin Mix:
Preheat oven to 350 degrees F. Line muffin tin with cupcake liners.
In a bowl combine all muffin mix ingredients, whisk thoroughly.
Fill cupcake liners 3/4 full of muffin batter. Add a heaping teaspoon of cream cheese filling to the top of the batter for each muffin. Generously sprinkle crumble mixture on top.
Bake for 25-30 minutes, or until toothpick inserted comes out clean.
